Method:

  1. Preheat your oven to 220ºC. Combine your black beans and cumin in a saucepan and heat all the way through.
  2. Squeeze in your lime juice and adjust your seasoning with salt and pepper. Remove from heat, but warm through before serving.
  3. Spray a large, heavy-based non-stick frying pan with your low calorie cooking spray and place over a medium-high heat.
  4. Season your chicken all over with salt and pepper, and sear in the hot pan for 3 to 4 minutes on the first side, until a nice crust develops, then flip.
  5. Cook for another 3-4 minutes, then spoon your salsa over chicken breasts, top with the cheese, and place in oven.
  6. Bake until your chicken is cooked through and your cheese has fully melted and is bubbling, no more than 5 minutes.
  7. When cooked divide your beans among 4 plates and spoon on top of your chicken.
