  • 8 chicken mini fillets
  • 4 tbsp harissa paste
  • 1 garlic bulb - broken into cloves
  • 1 lemon - cut into wedges
  • 400g cherry tomatoes on the vine
  • 350g new potatoes - halved if large
  • 50g Kalamata olives - chopped
  • 2 tbsp olive oil
  • Green salad to serve (optional)

  1. Heat your oven to 190C and score deep lines all over the chicken legs.
  2. Rub in the harissa and place in the roasting tin.
  3. Scatter over the garlic and squeeze over the juice of the lemon wedges before popping them into the tray with the chicken.
  4. Toss in the tomatoes, potatoes and olives.
  5. Season well and drizzle over the olive.
  6. Toss to ensure an even coating then place in the oven for 45 minutes to one hour until the chicken is golden and cooked through.
  7. Serve with a healthy salad if you wish.
