Ingredients
- 8 chicken mini fillets
- 4 tbsp harissa paste
- 1 garlic bulb - broken into cloves
- 1 lemon - cut into wedges
- 400g cherry tomatoes on the vine
- 350g new potatoes - halved if large
- 50g Kalamata olives - chopped
- 2 tbsp olive oil
- Green salad to serve (optional)

Method:
- Heat your oven to 190C and score deep lines all over the chicken legs.
- Rub in the harissa and place in the roasting tin.
- Scatter over the garlic and squeeze over the juice of the lemon wedges before popping them into the tray with the chicken.
- Toss in the tomatoes, potatoes and olives.
- Season well and drizzle over the olive.
- Toss to ensure an even coating then place in the oven for 45 minutes to one hour until the chicken is golden and cooked through.
- Serve with a healthy salad if you wish.
