  • 2 x 113g Veal Escalopes
  • 50g Plain Flour
  • Salt & Freshly Ground Black Pepper
  • 1 x Large Egg
  • 1 Tsp. Olive Oil
  • 100g Fine Breadcrumbs
  • Low Calorie Cooking Spray
  • For Your Salad

  • 200g Rocket Leaves
  • 100g Parmesan Cheese (Shaved or Grated)
  • 25g Capers in Brine
  • 100g Parmesan Cheese (Shaved or Grated)

  1. Preheat your oven to 200°C.
  2. Put your flour into a shallow bowl and season. Beat your egg with a teaspoon of olive oil in another dish. Then pour your breadcrumbs onto a plate. Season your escalopes with salt and pepper then coat them in flour on both sides and shake off the excess.
  3. Dip your escalopes into the egg then lay each escalope onto the crumbs, press down firmly to make sure your crumbs stick, then repeat the process.
  4. Take your baking tray and spray with your low calorie cooking spray. Place your escalopes in the baking tray and place in your oven. Leave to cook for 10 minutes before turning them over and cooking for a further 10 minutes.
  5. Remove your escalopes from your pan and drain on kitchen paper. Mix your rocket, parmesan, capers and olive oil together in a bowl, adding a teaspoon of the brine from your capers too.
  6. Place your escalopes onto warmed plates with wedges of lemon to squeeze over.
