However, you can satisfy your cravings without worrying about your waistline by subbing in peppers for tortilla chips. Simply stuff the wholesome combination of flavours and textures into nutrient-rich pepper boats!

Ingredients
- 400g Muscle Food Extra Lean Beef Mince (5%)
- 1 Tsp Chilli Powder
- 1 Tsp Cumin
- ½ Tsp Black Pepper
- ¼ Tsp Salt
- 170g Salsa, No Sugar Added
- 75g Low Fat Cheddar Cheese
- 3 x Mixed Peppers
- Fat-Free Greek Yogurt Or Low Fat Sour Cream (For Dipping)

Method:
- Remove seeds, core, and membrane from your peppers then slice each pepper in half. Then set your sliced bell peppers aside.
- Spray a large, heavy-based non-stick frying pan with your low calorie cooking spray and place over a medium-high heat, breaking up your beef mince as it cooks.
- Cook until your beef mince loses it’s pink colour and is cooked through. Drain off any fat. Preheat your ovento 190°C.
- Combine your cooked beef mince with your spices and salsa. Evenly distribute your mixture into your pepper boats and top with cheese.
- Bake for 10 minutes or until your cheese has melted and your peppers are hot. Serve with fat-free Greek yogurt or low fat sour cream for dipping.
