  • 400g Muscle Food Extra Lean Beef Mince (5%)
  • 1 Tsp Chilli Powder
  • 1 Tsp Cumin
  • ½ Tsp Black Pepper
  • ¼ Tsp Salt
  • 170g Salsa, No Sugar Added
  • 75g Low Fat Cheddar Cheese
  • 3 x Mixed Peppers
  • Fat-Free Greek Yogurt Or Low Fat Sour Cream (For Dipping)

  1. Remove seeds, core, and membrane from your peppers then slice each pepper in half. Then set your sliced bell peppers aside.
  2. Spray a large, heavy-based non-stick frying pan with your low calorie cooking spray and place over a medium-high heat, breaking up your beef mince as it cooks.
  3. Cook until your beef mince loses it’s pink colour and is cooked through. Drain off any fat. Preheat your ovento 190°C.
  4. Combine your cooked beef mince with your spices and salsa. Evenly distribute your mixture into your pepper boats and top with cheese.
  5. Bake for 10 minutes or until your cheese has melted and your peppers are hot. Serve with fat-free Greek yogurt or low fat sour cream for dipping.
