Veal Escalopes with Garlic Breadcrumbs

  1. Preheat your oven to 180°C and line a baking tray.
  2. Place the halved tomatoes on the lined baking tray, season and bake for 20 min.
  3. Put the bread, garlic and 3tsp of the extra virgin olive oil into a food processor and pulse until you have breadcrumbs.
  4. Fry the breadcrumbs in a large frying pan until crisp, approx. 4 min. Remove and cool.
  5. Clean off the pan and add the remaining tsp of oil.
  6. Heat and then add the half the veal, cooking for 1 min each side. Repeat with other half.
  7. Serve between 4 plates, sprinkle with breadcrumbs and top with the baked tomatoes.
  8. Season and garnish with mixed salad leaves and a little balsamic vinegar.
