Method:

  1. Heat your grill to high and pop the spuds on to boil for 4-5 minutes, or until tender.
  2. Add in the asparagus for the final minute then drain and set to one side.
  3. Meanwhile, heat the oil in an ovenproof frying pan, toss in the onion and cook until soft.
  4. Mix half the cheese with the eggs in a jug, season well and pour all over the onion.
  5. Scatter over the asparagus and potatoes, and top with the rest of the cheese.
  6. Pop under the grill and cook until golden.
  7. Slice into thirds and serve with a tasty side salad.
