  • STORAGE & PREP

    Cooking Tip: An hour before cooking take the beef out of the fridge, remove any wrapping and bring up to room temperature. When you are ready to start cooking, heat a griddle or cast-iron dish until very hot, then season the fillet all over and seal it by searing it briefly on the griddle or dish. Transfer to a roasting-tray, drizzle with olive oil and place in a preheated oven for 20 minutes. Remove from the oven and press the flesh with your finger – if it is soft and giving, the meat will be rare. If you prefer it medium-rare, return to the oven for a further five minutes. Allow to rest in a warm place, covered with a sheet of silver foil, for 20 minutes before carving.

    Keep refrigerated at 0-4ºC and consume by the use-by date on the pack.

    Also suitable for home freezing. Freeze before the use-by date. Defrost thoroughly before cooking and once defrosted, consume within 24-hours.
